Cumberland is a pork sausage that originated in the ancient county of Cumberland, England. It is traditionally very long, up to 50 centimeters(20 inches) and sold rolled in a flat, circular coil. Seasonings are prepared from a variety of spices and herbs, though the flavour palate is commonly dominated by pepper, both black and white.

Blue Cumberland is the same recipe as regular Cumberland but has been infused with blue cheese. Both Cumberlands are not gluten-free due to fresh breadcrumbs.
